For this jam we cooked apple and pear in a butterscotch, adding a small pinch of flower of salt from the Camargue region. It is a sweet jam in which the powerful aroma of the caramel blends harmoniously with hints of cooked apple and pear. A real discovery for an autumn of sensations.

We mainly use the apricot from Roussillon to make our jam because it is very flavoursome and has a good consistency during cooking. Its slightly acidic taste allows us to produce a well-balanced jam.

Blackcurrant is a fruit with low sweetness and a slightly acidic tang. It is very rich in fibre and in minerals but also in vitamins. This is a black currant that comes from the black gooseberry bush. The jam is slightly acidic and has a nice dark colour.

The kiwi is a fruit from China, once called currant in China. Occidentals only discovered the kiwi at the end of 19th century (introduced first to New-Zealand). The kiwi is a flexible creeper which clings to trees but is cultivated on trellises. The kiwi flesh is tender, juicy, sweet and slightly acidic.

The litchi is the fruit of a tree from South China. The litchi is a small fruit, whose red, thin and rough shell gets more rigid as it ripens and becomes drab and brown. Its translucent flesh is juicy, very sweet and very flavoursome. Its taste reminds you of rose and wild strawberry. In this recipe, we combined it with delicate and flavoured raspberry.
